We will tag user/s in Salesforce Chatter Post using Flows and Post to Chatter Flow Action.
Use case: When Lead status is “Working – Contacted” we will post to chatter and @ mention record owner.
Step 1: Create a Record Triggered Flow, like below:
Step 2: Select Action –> Post to Chatter.
Step 3: Select Post to Chatter and use @ and [] to tag the required User.
Save and Activate the Flow.

Note:
Queue’s cannot be tagged on Chatter posts.
